When I first went veg, eons ago, Charlotte restaurants didn’t offer many options. Fortunately for me, in the 90s Greek Salad was all the rage – and I LOVED IT! This tofu scramble combines all the salty and tangy flavors I loved in Greek Salad along while still being vegan and gluten-free.
