It’s Fall, y’all! Time for gooey grilled cheese and apple sandwiches!

I was obsessed with these sandwiches growing up. (The enormous Granny Smith apple tree in the back yard that I frequently climbed – and tumbled from – may have fueled my obsession.)

When I became vegan I took a break because early vegan cheeses weren’t exactly meltable.

Or creamy.

Or tasty.

Times have changed! Vegan cheese still doesn’t “melt” quite the same as dairy cheese, but it does get soft and gooey and a little drippy.

The recipe couldn’t be easier. Spread two slices of bread with Dijon mustard, and layer two slices of “cheddar” with a layer of thinly sliced Granny Smith or other tart apple. Mist a little oil in a skillet, then cook over medium heat about 2-3 minutes each side, until cheese starts to soften and sandwich is heated through. Eat and enjoy!

Variation 1: Use a sweet apple (Gala, Fuji) and a smoky cheese (smoked Gouda, smoked provolone).

Variation 2: Are you more team pear than team apple? Use slices of pear instead.
